Sangiovese based blend, with a small percentage of Bordeaux grape varieties (mainly Merlot) which lend roundness and “creaminess” to it. The practice of “Governo all’uso Toscano” is applied to part of the grapes, adding extra volume and richness to the final product.
Since 1705, Melini has been one of the foremost Chianti producers: its present foundations rest on a modern approach to the great Chianti tradition and on a quest for high quality straight from the vineyard. The results obtained are epitomized by products such as Chianti Classico Riserva Granaio, Terrarossa, Massovecchio and Selvanella, wines that have gained prestigious acknowledgements in Italy and throughout the world.
85% Sangiovese Grosso
15% complementary varieties.
N.B. “Governo all’uso Toscano”: This technique involves saving a batch of harvested grapes and allowing them to partially dry. Subsequently, the half dried grapes are added to the must. This then gives the yeast cells a new source of sugar and spurs the batch into a bout of renewed fermentation. The resulting wine is unmistakably fresher, richer and livelier.
The grapes are sourced exclusively from areas traditionally acclaimed for their happy combination of soil, position and climate; the vineyards, of relatively recent establishment and high density, are trained by the Guyot and spurred cordon systems on well exposed terrain made up of alberese, galestro, limestone marl, clay and Pliocene conglomerates; The production is limited to 9 tons of grapes per hectare, with a 70% yield in wine.
While traditional methods are followed, modern criteria are applied: controlled maceration for about ten days, with frequent pumping-over, makes the taste softer and round and the bouquet more fragrant. The very slow and steady re-fermentation from “Governo all’uso Toscano” produces a wine that is “rich”, well structured and of outstanding complexity.
For about 6 months in stainless steel tanks and large vats. Then the wine is allowed to rest for some time in the bottle before being released for consumption.
