The Cà Bordenis vineyard is a 5.09 hectare cru located at Calmasino di Bardolino. It is planted using the Guyot system and faces Lake Garda with a south-east exposure at an altitude of 130 metres a.s.l. The land, eroded by the Wurnian glaciation, is quite poor but rich in calcium with a hard stony skeleton; this limits yields to jus 8-10 tons of grapes per hectare. Many consider this vineyard to be an example of the most correct agronomic management of the classic Bardolino area and it is used by the local bodies as the best example for monitoring the pedoclimatic conditions and grapes ripeness.
The perfectly healthy and ripe grapes are picked at the end of September and, after crushing, are kept in tanks at a low temperature for a few days. After this cold pre-fermentation maceration, the temperature is allowed to rise and start a slow fermentation of 6-8 days. Various systems of temperature control are used to suit the structural and aromatic components and to enhance the primary and micro-climatic qualities of the grapes.
After the malolactic fermentation, the wine is allowed to refine in stainless steel tanks and then rests in its bottle for some time before being released.
Deep, ruby red colour; fresh and fragrant bouquet, with strong hints of raspberry and wild cherry, spices and flowers; fruity and particularly savoury flavour, with good body and excellent length.
12% alcohol vol.
Serve with cured pork meats, savoury first courses, poultry and white meats.
Serving temperature: 14-16°C.
